Batch #4 – Started 11/9/2010 – Pinot Noir, Chile

Day O – Primary Fermentation Started – 11/9 at 12PM – Specific Gravity = 1.094 / 12.5%PA  (initial reading)
     16 liters grape juice
     7 liters Nestle Purified water
     Accidentally added 60 Grams Oak Flakes (Removed and stored for 1st racking)
     5 Grams yeast (EC-1118)
     15 Grams bentonite (stirred)

Day 2  (11/11)   Specific Gravity = 1.090 / xxxPA (stirred)

Day 4  (11/13)   Specific Gravity = 1.032 / 4.2%PA
     Added 60 grams of Select Oak flakes to empty carboy 
     Added Yeast nutrient to primary and stir, then racked

Day 10  (11/19)   Specific Gravity = 1.000 / xxxPA (stirred)

Day 12  (11/21)   Specific Gravity = 0.998 / xxxPA (stirred)

Day 15  (11/24)   Specific Gravity = 0.996 / 4.2%PA (racked)
     Racked off sediment 
     Added Potassium Metabisulfite
     Added Siligel, stirred 3 minutes, then added Liquigel, stirred 3 minutes
     Added 1 bottle of Jacobs Creek Shiraz, 1/2 bottle Blackstone Pinot Noir

Day 23 (12/2)   Specific Gravity = 0.999 ????/ xxxPA (planned to bottle, but SG is now off.

Day 25 (12/4) Specific Gravity = 0.999 Bottling Day
    We are a bit concerned about the 2nd racking too early might have killed the fermentation too early
    Finished bottling (30.5 bottles Clear and bright, 1 bottle with slight sediment)
