Day O – Primary Fermentation Started – 11/9 at 12PM – Specific Gravity = 1.080 / 10.5%PA  (initial reading)
     12 liters grape juice + grape pack
     13 liters Nestle Purified water
     40 Grams French Oak shavings #020780  (Stirred)
     15 Grams bentonite
     5 Grams yeast (EC-1118)  (Stirred)

Day 2  (11/11)   Specific Gravity = 1.070 / xxxPA Stirred keeping grape pack submerged

Day 4  (11/13)   Specific Gravity = 1.025 /3.2%PA  Stirred keeping grape pack submerged

Day 6  (11/15)   Specific Gravity = 1.008 / 1.0% PA Stirred keeping grape pack submerged

Day 8  (11/17)   Specific Gravity = 1.000 /xxx%PA  Racked
     Added Enzyme pack

Day 10  (11/19)   Specific Gravity = 1.000 /xxx%PA  Stirred

Day 12  (11/21)   Specific Gravity = 1.000 /xxx%PA  Stirred

Day 38  (12/17)   Specific Gravity = 0.997/xxx%PA  
     Racked wine into Primary fermenter and degassed
     Added Potassium Metabisulfite and Sorbate
     Racked wine back into Glass Carboy
     Added Kieselsol into carboy – stirred for 1 minute, let sit for 1 hour
     Added 3/4 bottle of Oak Leaf Merlot
     Added Chitosan to warm water, then to carboy – stirred for 1 minute and replaced airlock

Day 54  (1/2/11)   Bottling Day
     Racked off sediment into Primary bucket
     Finished bottling (31 bottles Clear and bright)
