Batch #1 – Started 8/ 22/2010 – Rhone Style USA Grapes, Castel del papa

Day O – Primary Fermentation Started – 8/22 at 5PM 
     10 liters grape juice
     13 liters Wal-mart spring water
     15 Grams bentonite
     5 Grams yeast (EC-1118)

Day 2  (8/24)   Specific Gravity = 1.081 / 10.6%PA  (initial reading)

Day 3  (8/25)   Specific Gravity = 1.037 / 4.8%PA
     Racking to Secondary Fermentation – 8/25 at 8PM (tooooo early to Rack at S.G. 1.040 as stated in instructions)
     Added Yeast nutrient and Oak chips, then…….

Day 4   (8/26)   Specific Gravity = 1.009 / 1.1%PA
      Replaced Blow-off tube with airlock at 2PM
      SG reading at 5PM… life is normal again!

 

 

 

 

 

 

 

Day 6   (8/28)   Specific Gravity = 1.003 /0.2%PA   –   Stirred for Oak chips

Day 8   (8/30)   Specific Gravity = 1.000 /0.0%PA   –   Stirred for Oak chips

Day 9   (8/31)   Specific Gravity =0.097/-0.3%PA   –   Stirred for Oak chips

Day 11 (9/2)     Specific Gravity = 0.096/-0.4%PA   –  Stirred

Day 12 (9/3)     Specific Gravity = 0.096/-0.4%PA   –  Stirred
     Degassed with drill
     Added 1/4 TSP PotMetaBisulfite and stirred 2-3 minutes
     Added 7 mL Siligel and stirred 2-3 minutes
     Added 7 mL Liquigel and stirred 2-3 minutes
     Filled Glass Carboy empty space with
          750mL Tisdale Shiraz (no year…. the good stuff)
          500mL Kris Pinot Noir 2008

Day 20  (9/11)    Specific Gravity = 0.0955/-0.5%PA   –   Bottling day
     Racked back to Primary bucket and added 4 Grams Potassium Sorbate w/ 2 fl oz cold water
     Made 29.5 Clear bottles, 2 bottles of cloudy mix with sediment, and 3/4 bottle for tasting = 32.25 bottles
     Alcohol content created from Day 2 PA – Day 20 PA = 11.1 %
     Likely that Day 0 and Day 1 we created additional alcohol because fermentation was very active during Day 1
