#9 Meglioli Amorone

Day O – Primary Fermentation Started – 4/20 at 2PM, Intial S.G. 1.098 
     23L grape juice (lot number on bag #0117)
     All Grape pack (real grapes and stems)
     15 Grams bentonite
     5 Grams yeast (EC-1118)

Day 1  (4/21)   Specific Gravity = 1.090 / xxx%PA  Stirred

Day 2  (4/22)   Specific Gravity = 1.071 / xxx%PA  Stirred

Day 3  (4/23)   Specific Gravity = 1.024 / xxx%PA  Stirred

Day 4  (4/24)   Specific Gravity = 1.000 / xxx%PA  Stirred

Day 5 (4/25) – Specific Gravity = 0.998 Racked to Glass Carboy 
     Added Yeast Nutrient to Primary
     Added 180 Grams of wood chips (select Oak) to Glass
     Strained all Juice into carboys.  Filled 6 Gallon Carboy +
     Half of 1 Gallon Glass Carboy.  Topped off this one with 2 bottles of 1/2/11 CC Sterling Collection Napa Cab we made

Day 8  (4/28)   Specific Gravity = 0..996/ xxx%PA  Stirred
     Noticed that we had some blow-out and the airlock was red.  Not much lost but possible sulfite spill into wine

Day 15 (5/5) – Specific Gravity = 0.994 Racked off sediment 
     Degassed for 3 minutes and added Potassium Metabisulfite
     Added Siligel, Stirred for 3 minutes, Liquigel and stirred for 3 minutes
     Topped off with a little Cabernet Sauvignon

Day 42  (6/1)   Bottling Day ~ 30 – 750ml Clear Bottles 
     Added 5Grams of Potassium Sorbate
     Added Kristalblok conditioner and stirred for 3 minutes
     Final ABV is xx.x%
     We also had an extra batch of 5 extra bottles that were from the excess mixed with the following wines to keep topped
          Carlo & Rossi
          Blackbox
