13 liters Nestle Drinking Water
30 Grams bentonite, 2 Packs
5 Grams yeast (EC-1118)
Day 2 (2/23) Specific Gravity = 1.085 / xxx%PA Stirred
Day 4 (2/25) Specific Gravity = 1.035 / xxx%PA Stirred
Day 7 (2/28) Specific Gravity = 0.998/ xxx%PA Racked
Stir to resuspend Sediment
Add Yeast Nutrient
Rack to glass carboy
Day 17 (3/7) Specific Gravity = 0.996/ xxx%PA 2nd Racking
Degass for 3 minutes with drill
Add Potassium Metabisulfite
Add Siligel and stir for 3 minutes
Add Liquigel and stir for 3 minutes
Top off wine with Cabernet Sauvignon (box) Carlo Rossi
Day 27 (3/17) Specific Gravity = 0.996/ -0.4%PA Bottling Day
Racked to Primary off sediment
Added Potassium Sorbate
Bottled 30 x 750mL bottles and 1 x 3/4 full bottle topped with Carlo Rossi Cab Sauv = 31 bottles
